German Chocolate Cupcakes


German Chocolate cupcakes are a fantastic blend of chocolate, coconut and pecans.

Items Needed:
Chocolate cake mix
Pecans
Cream Cheese Filling
Dark Chocolate Frosting
Coconut Frosting

Directions:

  1. Mix cake mix as directed.
  2. Add about a Tbsp. of cream cheese filling to the top of each cupcake, and cover lightly with a bit of chocolate cake mix. The cream cheese will move to the bottom of the cupcake while baking. If you don't cover it with a bit of chocolate cake mix, the cream cheese filling will explode all over the cupcake tin while baking.
  3. Bake cupcakes as directed on box.
  4. Before frosting the cupcakes reserve 1/3 cup of dark chocolate frosting.
  1. When turtle cupcakes are cool, frost first with a little dark chocolate frosting, then a dollop of coconut frosting, and top with a single pecan.
  2. Just before serving drizzle the German Chocolate cupcakes with chocolate frosting (mix reserved 1/3 cup dark chocolate frosting with 3 Tbsp. cream).
  3. Serve and watch the smiles appear.

 

Tips:

  • The coconut frosting can become very stiff and difficult to manage when in the fridge. Warm it up a bit in the microwave before using. 


    Cream Cheese Filling
    1/4 cup butter or margarine
    4 oz. cream cheese
    1 3/4 cups powdered sugar
    Mix all ingredients until well blended.

    Keep refrigerated when not using. 



    Dark Chocolate Frosting 
    1/2 cup powdered sugar
    1/2 cup cocoa powder
    1 Tbsp. butter
    3/4 cups heavy cream or half and half
    Mix all ingredients until well blended.

    May use milk. Try adding 1/2 cup and then slowly add more. Because milk is thinner you won’t need as much.

    Dutch cocoa has been treated so it won’t have the bitter taste. A natural cocoa will have a more bitter taste if you prefer that.

    Keep frosting refrigerated when not using. 



    Coconut Frosting 
    1 egg
    2/3 cup cream
    2/3 cup  sugar
    1/4 cup butter or margarine
    1 1/3 cup flaked coconut
    1/2 cup pecans
    Slightly beat egg and add cream, sugar and butter in a saucepan.

    Cook over a medium heat, constantly stirring, about 10 minutes. Mixture will be bubbly and thicken.

    Poor mixture over a bowl with coconut and pecans. Mix well.

    Keep frosting refrigerated when not using.
