Chocolate Turtle Cupcakes


Chocolate Turtle cupcakes are smooth and crunchy and scrumptious.

Items Needed:
Chocolate cake mix
Caramel Bits
Pecans
Caramel ice cream topping
Dark Chocolate Frosting

Directions:

  1. Mix cake mix as directed.
  2. Fill cupcake tins half way.
  3. Add 1 cup caramel bits and 1 cup chopped pecans to remaining cake mix and mix in. Then top off the cupcakes with remaining cake mix.
  4. Bake cupcakes as directed on box.
  5. When turtle cupcakes are cool, frost with dark chocolate frosting and top with a single pecan.
  1. Just before serving drizzle with caramel ice cream.
  2. Serve and watch the smiles appear.

 

Tips:

  • You can sometimes find caramel bits in your grocery store with the chocolate chips. Otherwise, chop up candy caramels. Use scissors that you ocassionally spray with oil as you chop the caramels.
  • The nuts and caramel bits will settle to the bottom, this is why you put some mix in the bottom of each cupcake tin before adding the caramel bits and nuts.


Dark Chocolate Frosting 
1 cup powdered sugar
1 cup cocoa powder
2 Tbsp. butter
1 ½ cups heavy cream or half and half
Mix all ingredients until well blended.

May use milk. Try adding 1 cup and then slowly add more. Because milk is thinner you won’t need as much.

Dutch cocoa has been treated so it won’t have the bitter taste. A natural cocoa will have a more bitter taste if you prefer that.

Keep frosting refrigerated when not using.
